The Solo Scale:
Eating great food in Las Vegas doesn’t always mean dropping hundreds of dollars on an experience. Sometimes, great bites are hiding around the corner in the hotels. For instance, the Chef Food Truck, which can be found just off the lobby in the Park MGM. The Park MGM is already an oasis for non-smokers, given that the casino and the hotel itself are non-smoking. Having Roy Choi’s Best Friend sit-down restaurant and the Chef food truck as options (on top of Eataly) makes it a haven for foodies as well.
If you head towards the pool from the lobby, hang a right instead of a left, and you’ll stumble on the food truck. It offers a breakfast menu, then lunch & dinner, and also sells limited merchandise.
You might know this food truck from the same-named movie, starring Jon Favreau. The movie features a food truck just like the one in the Park MGM, but Jon Favreau won’t be serving you food here.
The Food
The menu is similar to the one in the movie, offering breakfast sandwiches in the early hours. Later, it shifts to Cubano sandwiches at lunch alongside pork bowls, shrimp & pork tacos, and fritters.
I ordered the shrimp po’boy tacos and the ham & cheese croquettes. I received the wrong order (plain cheese), which were still delicious, but definitely missing the extra protein to cut the richness of the cheese. The shrimp po’boy was big enough to serve two and was extremely refreshing, made on the spot with fresh veggies.
Our group also had plantain chips, which were crunchy and delicious and a perfect side to go with the tacos. It was a decently affordable price (for Vegas) and the wait was minimal to receive our food, even at lunchtime.

Plus,if you’re staying at the Park MGM, this is a great thing to grab and take to the pool to lounge and enjoy while you soak in the Vegas heat (most months of the year).
